Sylvan Mishima Brackett is the chef and owner of Rintaro in San Francisco. Born in Kyoto and raised in Northern California, he trained in Japan and worked as creative director at Chez Panisse before opening Rintaro in 2015. The restaurant draws on Brackett’s Japanese heritage and his mother’s cooking, combining ingredients from Japan with local produce, meats, and seafood. The space was built with materials from near Sylvan Mishima Brackett’s childhood home and reflects the blend of California and Japanese influences in the food.
