Jillian Vose brings nearly two decades of experience in the food and beverage industry, marked by steady growth, creativity, and leadership. Raised on Cape Cod, Massachusetts, her career has taken her from Arizona and New York City to South Carolina, where she is preparing to co-launch her first independently owned concept, Hazel & Apple. Opening soon in Charleston, Hazel & Apple will offer three unique experiences: The Hazel, a welcoming front bar inspired by the warmth of an Irish pub; The Apple, an elevated cocktail space showcasing Jillian’s mastery of innovation, seasonal ingredients, and distinctive glassware; and a garden extension of The Apple, designed for a more intimate outdoor experience.

Beyond Hazel & Apple, Jillian has expanded her entrepreneurial ventures internationally. In October 2023, she co-founded Outwalker Irish Whiskey in Ireland, creating the brand’s flagship blend and laying the foundation for global distribution. That same year, she became a vested partner and brand ambassador with Badger Bevs, a luxury domestic soda mixer company with plans for nationwide growth in the U.S.

Prior to relocating to Charleston, Jillian spent nearly a decade as Beverage Director and Managing Partner at The Dead Rabbit in Lower Manhattan. Under her leadership, the bar achieved global acclaim, winning multiple Tales of the Cocktail Spirited Awards, including World’s Best Bar. She spearheaded the creation of its celebrated cocktail menus, earning the World’s Best Cocktail Menu award in 2015 and solidifying its reputation as a destination for innovation. Jillian herself was recognized among the Top 10 American Bartenders at the Spirited Awards in 2017, becoming a two-time award winner.

Her influence extends globally through leading seminars, executing pop-up events, and consulting in major cities such as London, Paris, Tokyo, Dubai, and Shanghai. She is also co-author of several notable works, including The Dead Rabbit Mixology & Mayhem (2018) and Paddy Drinks: Modern Irish Whiskey Cocktails (2022).

Earlier in her career, Jillian honed her craft at New York institutions Death & Co. and Maison Premiere, where she built expertise in menu development and bar operations. At just 24, she earned her Level One Court of Master Sommeliers Certificate and later completed the prestigious BAR 5-Day Program in New York, opportunities that deepened her technical foundation and industry connections. Her professional recognition includes judging for the Ultimate Spirits Competition (2016–2018), the Diplomatico Rum World Finals in London, and other international competitions.

From her early days at fine dining venues in Arizona to launching global spirits brands, Jillian’s career reflects a passion for hospitality, a pursuit of excellence, and a commitment to shaping the next generation of beverage innovation.
