Growing up in Hawaii shaped Chef Gevin’s cooking style, deeply influenced by the diverse ethnicities found across the islands. At Japengo, the menu is “Pacific Rim” inspired, drawing upon the bold and unique flavors of Japan, Korea, China, Thailand, the Philippines, Singapore, Indonesia, and beyond. These cuisines are reimagined through a modern lens, while still honoring their authentic roots. The goal is always to create a memorable Japengo dining experience by showcasing authentic ingredients and thoughtful preparations.
Born and raised in Lahaina, Maui, Chef Gevin’s fascination with cooking began at an early age as he watched his family prepare meals for gatherings and celebrations. Fresh fish, meats, and vegetables were always abundant, often traded between his father, local fishermen, and ranchers. His father, who worked long days in the sugar cane fields of Lahaina before returning home to cook dinner, became his greatest inspiration and role model in the kitchen.
Since 2010, Chef Gevin has led Japengo to numerous awards and accolades. He resides in Lahaina with his wife, Marisa, and their children: Shawn, Mia, Megan, and baby Molly.
