Fabrice’s journey in hospitality began in San Diego, California, where his father first introduced him to the nuances of service and a shared love for wine. Growing up in restaurants, he developed a deep appreciation for products crafted with respect for the land, the process, and ultimately, the guest—a philosophy that continues to guide his work today.

After earning degrees in Automotive Science and Public Relations, Fabrice moved to Paris in 2010 to join a PR firm specializing in food and spirits. His passion for service soon drew him back into restaurants, and he spent four years managing La Grande Crémerie, a small natural wine bar in the 6th Arrondissement. That time not only refined his palate but also immersed him in diverse cuisines and service styles that shaped his approach behind the bar.

In 2017, Fabrice relocated to Honolulu, trading Parisian winters for year-round surf. He first bartended at the much-loved 12th Ave Grill before joining Fête in 2020, right in the midst of the pandemic. Over the past five years, he has grown into the role of Lead Bartender, creating dynamic seasonal cocktail menus that highlight local ingredients and draw inspiration from his culinary background and personal experiences.

For Fabrice, the best cocktails don’t just balance flavors—they tell a story, bridging technique, terroir, and memories.
