Devon Tarby began her career as a bartender at influential Downtown Los Angeles cocktail bar The Varnish. There, she met her partners in Proprietors LLC, a bar consulting, operations, and management company with an emphasis on cocktail driven F&B programs. At Proprietors, Tarby led consulting on over 60 openings in the US and abroad, with notable projects including Skyfall and Rivea by Alain Ducasse in Las Vegas NV; Little Palm in Charleston, SC; Sparrow in Fort Lauderdale, FL; Rabbit Hole Distillery bar in Louisville, KY; Uncle Nearest Distillery Bar in Shelbyville TN; and Canopy by Hilton, Global, among others. Tarby was also responsible for co-creating The Walker Inn (World’s 50 Best Bars, 2016) and The Normandie Club (Los Angeles) under the Proprietors LLC umbrella.

In 2018, Tarby and her partners founded Gin & Luck, uniting world-renowned cocktail brand Death & Company and Proprietors LLC under one parent company. During her 5 years as a member of Gin & Luck’s executive leadership team, Tarby led new concept development, ongoing concept direction & strategy, brand standards, and food & beverage programming for openings and ongoing operations within the company.

Today, Tarby operates as an independent hospitality consultant, working with a select group of clients in a variety of capacities including: food & beverage programming, brand positioning, business infrastructure, systems creation and implementation, cocktail styling, events, and ready to drink cocktail recipe formulation.

Devon Tarby is also a co -author on the 2019 James Beard and Spirited Award-winning book, Cocktail Codex: Origins, Fundamentals, Formulas and a contributor on the 2021 James Beard Award nominated Death & Co: Welcome Home.
