Jeremy Shigekane is a celebrated culinary artist with over two decades of fine dining experience and more than ten years of immersion in Hawaii’s rich culinary landscape. In his new role as the Executive Chef at Prince Waikiki, Shigekane oversees operations and menus at the hotel’s distinguished signature dining venue—100 Sails Restaurant & Bar—as well as the Hinana Bar by the poolside, and catering, in-room and event dining experiences.

Combining French culinary techniques with a profound understanding of local flavors and traditions, Shigekane brings a unique fusion of world-class cooking to the table. His journey to Prince Waikiki saw him honing his craft in some of New York City and San Francisco’s most esteemed kitchens, including Bouley, Café Grey, Hawthorne Lane, and the Ritz Carlton Half Moon Bay. Upon his arrival in Hawaii, he further enriched his culinary repertoire at iconic establishments such as The Royal Hawaiian, Hoku’s at the Kahala Hotel, and Chai’s Island Bistro. Notably, he served as Chef-Owner of M by Jeremy Shigekane (formerly Chef Mavro), where he mastered the art of chef-driven Hawaii-French cuisine.

With a commitment to innovation and excellence, Jeremy Shigekane is eager to infuse fresh island ingredients and his distinctive culinary perspective into the fine dining experience at Prince Waikiki.
