Don Baldosano is the chef behind Linamnam. At 27, his work is dedicated to exploring the possibilities of Filipino food through research and travel across the Philippine archipelago. Guided by a deep respect for regional traditions, heritage techniques, and local food cultures, he continually translates his discoveries into an ever-evolving tasting menu that reflects the richness and diversity of Filipino cuisine.
Linamnam is a 10-seat modern Filipino tasting menu dedicated to exploring the evolving possibilities of Filipino food. Through an ever-changing seasonal menu, Baldosano reinterprets the country’s diverse culinary traditions, highlighting overlooked ingredients, regional dishes, and heritage techniques discovered through research across the Philippine archipelago.
Guided by the seasonal bounty of the islands, every ingredient is sourced directly from farmers, fishermen, and producers throughout the Philippines. Each menu reflects the stories, landscapes, and communities behind every ingredient, offering a contemporary perspective deeply rooted in Filipino culture.
With only ten seats and a single seating each service, the experience is intentionally intimate. Don Baldosano personally prepares every dish and presents each course to every guest, sharing the inspiration, research, and stories behind the menu, creating a direct connection between the people, places, and traditions that shape Filipino cuisine.
