Ryan Brannigan is the Chef de Cuisine for Manta at the Mauna Kea Beach Hotel, Autograph Collection. he grew up on the Island of Hawaiʻi’s Kohala Coast, surrounded by the local farms and upcountry fields of Honoka`a and Waimea.
Brannigan and the Manta Culinary team expertly craft each dish around the produce, meats, and seafood provided by our local partnerships with farms, ranches, and fisheries, allowing the bold flavors of the island’s provisions to speak for themselves. During his tenure as Chef de Cuisine, he has developed a modest, yet complex style of cooking that redefines Pacific Regional while honoring the rich tradition of culinary excellence at Mauna Kea.
