Liko Dowling was born and raised on The Garden Isle of Kauai and moved to Honolulu in 2002 to pursue a degree in Architecture at the University of Hawai’i at Mānoa.
Culminating his 15 years of restaurant experience, Liko found a home at Nobu Waikiki in 2009, while working his way up from busser to server, and familiarizing himself with the cross-cultural cuisine of world renowned chef, and restauranteur, Nobu Matsuhisa. An artist himself, with a specific passion for graphic design, Liko was always intrigued by the creative aspect of the bar world.
Under the mentorship of Bar Manager, Kenny Lum, and Lead Bartender, Alicia Yamachika, Liko made a dynamic ascension to Lead Bartender of Nobu Honolulu, where he proceeded to blow the competition away winning numerous intra-Nobu Grand Cordon competitions, resulting in multiple placements for his original cocktails on Nobu bar menus nationwide. His most recent achievement has been as Lead Bartender at the Nobu Pop-Up Restaurant in the Indian Wells Tennis Garden, in Palm Springs, CA.
