Dane Dostert, an Oregon native and graduate of the University of Colorado Boulder, fills two roles at Maui Tropical Plantation. One as the properties Sustainability Coordinator and also as Head Bartender of The Mill House.
Dane splits his time between cocktail chemistry, farming, and spearheading sustainability efforts on this 1800 acre property in central Maui. Dane honed his craft bartending skills first in Colorado and then in Hawaii.
Working in Maui, Dane is motivated by the opportunity to utilize fresh, local ingredients in their peak of flavor. These include the low-waste and preservation efforts made in the bar program, the growing of heirloom sugarcane, a kitchen managed garden, a restaurant-wide compost program, a property-wide carpool program, a plastic reclamation project with Love the Sea, an ongoing partnership with Surfrider Foundation and the education of plantation team members on topics of sustainability, sugarcane and cocktail history.
