Paul Lato was born in Poland and educated in Canada where he become a sommelier in 1992. After working for over ten years in Toronto's best restaurants he decided to pursue his dream of winemaking and moved to California, where during the 2002 vintage he started his eponymous wine brand in Santa Barbara County. Paul's goal is to produce soulful, complex and elegant wines from California's best vineyards. He focuses on single vineyard Pinot Noir, Chardonnay, Grenache and Syrahs made in very small lots. From the first vintage his wines received many accolades and are sold almost exclusively though the mailing list and served in America's best restaurants. Other markets include Japan, Denmark and Sweden. For his 2011 vintage the total production was 1800 cases.
