Dave Power is a Key Account Manager for Southern Wine and Spirits of Hawai‘i. Currently focused on spreading the word of Southern’s craft beer portfolio. He began bartending in Hawai‘i in 2005 on the island of Kauai and then went on to spend four years managing the bar program at Ed Kenney’s Town restaurant in Honolulu before moving back to Kauai to open his own neighborhood restaurant, The Feral Pig, in 2011.
A year in Rome during university solidified Dave’s desire to seek out the best and freshest ingredients to cook with, but it wasn’t until his time at Town that he applied both the use of local ingredients and chef cooking techniques towards making cocktails. He credits the talents of Town’s chefs, Dave Caldiero, Mark Noguchi and Chris Sy to increasing his knowledge of both technique and their application towards development of flavors in cocktails. He also credits Dave Newman, Kyle Reutner, Christian Self and Joey Gottesman for inspiring and pushing him in new directions of craft cocktail barman-ship.
As a Key Account Manager for Southern, Dave is inspired to find ways to share his passion and knowledge with other bartenders, pair the world’s best beverages with the island’s best food, and continue to make Hawai‘i a destination for amazing food and drink.
