A native of Peru, Chef Ricardo Zarate showcases his vast experience with Japanese techniques while paying homage to the culinary culture of his hometown.
Upon graduating Lima’s top culinary school, Zarate moved to London where he worked in the city’s most celebrated restaurants and hotels—including One Aldwych and Zuma. After 12 years, Zarate relocated to Los Angeles and opened Mo-chica in the summer of 2009, which received immediate recognition from both regional and national audiences. He and his partners then launched a series of pop-up dinners—Test Kitchen—through which he worked alongside some the city’s most renowned chefs. Zarate further solidified himself as a leading nouveau-Peruvian chef: he opened Picca, a lively modern Peruvian cantina—prior to reviving the original Mo-chica in a new, more spacious downtown location where he could offer traditional Peruvian comfort in a fun, urban environment.
