Jem Secrest fell in love with cooking from the moment she first held a knife and helped her mom cook meals for the family dinner. By the time she was college-bound she had already set her eyes on a career in culinary arts. An avid lover of the outdoors Jem went on to graduate from the private Park Paul Smith College located in New York’s picturesque Adirondack Park. She graduated with an Associate Degree in Baking, and a Bachelor Degree in Culinary Arts and Service Management.
Following her love of food and wildlife conservation, Jem has worked for businesses devoted to quality of fresh and sustainably sourced food in many idyllic locations. These have included Fairbanks, Alaska; Boston, Massachusetts; Phoenix, Arizona; and now Honolulu, Hawaii.
During her Hyatt culinary career, Jem has taken her early years in towns focused on food sustainability and applied it to the Hyatt food philosophy to serve food that is thoughtfully sourced and carefully served. This included a focus on seafood and the utilization of regional ingredients. Since moving to Honolulu in 2017, Jem has enjoyed cooking with a whole new selection of seafood and fresh local ingredients that are expanding her flavor profile. You can find Jem snorkeling or kayaking along the shores of Oahu or at Japengo Steak and Seafood where she is bringing her talent and passion to every dish.
