Macy's cooking demo with Chef Roy Yamaguchi

Event co-chair Chef Roy Yamaguchi of Roy's Restaurants was on hand at Macy's Ala Moana Saturday for the second cooking demo for the Hawai'i Food & Wine Festival.

Yamaguchi kept the demo light with frequent jokes mixed with in-depth explanations of various cooking methods and ways of creating complex layers of flavors. He stressed several times that when cooking, you shouldn't concentrate on the recipe, but focus on understanding the method behind the cooking.

During his demo, Yamaguchi explained what happens to meat as it cooks and how pre-cooking with a sous vide machine can yield the perfect fried egg.

Yamaguchi also stressed the importance of using local ingredients, which he practices in all of his restaurants and is a central theme of the Hawai'i Food & Wine Festival. In his demo, he used Kulana beef from the Big Island, Ho Farms tomatoes and greens from Nalo Farms.

Participating at later dates in the summer series are chefs Ed Kenney (Aug. 18), Mark Noguchi (Sept. 1) and just added to the line up, Nancy Silverton of Mozza in Los Angeles (Sept. 8).
